Green Bean Feta Salad

  • almonds (slivered)

  • basil (chopped)

  • cherry tomatoes (sliced in half)

  • feta cheese crumbles

  • garlic (minced)
    1 large clove
  • green beans (ends trimmed)
    1 lb
  • ground black pepper
  • olive oil

  • red onion (chopped)
    2 tbsp
  • red wine vinegar
    2 tbsp

    Boil a large pot of salted water. Add green beans (ends trimmed) and cook until tender crisp, 1 to 2 minutes. Use a spider to remove the green beans to a bowl of ice water. Drain the green beans well, pat dry and place in a large bowl.

    Combine the green beans with feta cheese crumbles , cherry tomatoes (sliced in half) and red onion (chopped) .

    Toast almonds (slivered) in a small skillet, 2 to 3 minutes. Remove the almonds to a plate.

    Whisk together olive oil , red wine vinegar , basil (chopped) , garlic (minced) and salt and ground black pepper to taste. Pour the dressing over the green beans.

    Sprinkle the green beans with the toasted almonds. Let marinate in the refrigerator for ⏱️ 1 hour before serving.
